牦牛是生活在地球之巅的半野生、半原始珍稀动物,与北极熊、南极企鹅共称为“世界三大高寒动物”。距今200万年前,牦牛就出现在青藏高原上。目前,全世界存栏的牦牛为1400万头,至少有95%的牦牛生活在中国青藏高原上。藏区谚语说:“牛吃虫草我吃牛,无病无灾药不求”。在缺医少药的高原地带,藏区人们依然拥有健壮的体格,跟他们以牦牛为主食的饮食结构是分不开的,由此可见牦牛肉超乎寻常的食用价值和营养价值。
The yak is a semi-wild and semi-primitive rare animal living on the top of the earth. It is commonly called “the world’s three alpine animals” with polar bears and Antarctic penguins. 2 million years ago, yaks appeared on the Qinghai-Tibet Plateau. At present, there are 14 million heads of yaks in the world and at least 95% of the yaks live on the Tibetan Plateau in China. Tibetan proverb says: “I eat cattle eat Cordyceps, no disease without disaster ”. In areas lacking medicine and medicine, people in Tibetan areas still have a strong physique which is inseparable from their dietary structure with yak as the staple food. This shows the unusual edible value and nutritional value of yak meat.
