目的:为了解张掖市餐饮具消毒卫生质量,探讨其影响因素,提出改进建议与对策。方法:大肠菌群纸片法,按国家规定的检测方法进行检测。结果:总体合格率44.0%,大型餐馆合格率较高,中小型餐馆合格率较低,不同类型餐饮业单位,不同类型餐具以及各年度餐具消毒合格率都有高度显著性差异。结论:应加强餐饮业餐具消毒监管力度,采取综合措施进一步提高餐饮具消毒卫生质量。
Objective: To understand the quality of tableware disinfection and hygiene in Zhangye City, explore its influencing factors and put forward suggestions and countermeasures for improvement. Methods: coliform bacteria paper method, according to the national test method for testing. Results: The overall pass rate was 44.0%. The passing rate of large restaurants was high. The passing rate of small and medium-sized restaurants was low. There were highly significant differences among different types of catering industry units, different types of tableware and the passing rate of tableware for each year. Conclusion: We should strengthen the regulation of tableware disinfection in catering industry and take comprehensive measures to further improve the quality of tableware disinfection and health.
