以珊瑚菌(Ramaria botrytoides)为原料,研究珊瑚菌多糖的提取及其对羟自由基的清除作用。在单因素试验的基础上,采用L9(34)的正交试验,得出珊瑚菌多糖的适宜工艺条件,即浸提温度90℃,液料比1︰20,浸提次数1次,浸提时间1 h,在此条件下粗多糖提取率为4.995%。体外抗氧化试验表明,珊瑚菌多糖具有清除羟自由基的能力,随着多糖浓度的升高,对.OH的清除率逐渐增大,当多糖液浓度5 mg/mL时,羟自由基的清除率达到34.99%。
