延缓水稻叶片衰老,有增产的显著效果。因之,阐明衰老机理,对调节叶片早衰,进一步提高水稻产量有重要意义。 蛋白质降解是叶片衰老的基本特征。水稻叶片存在着三种以上蛋白水解酶,但在蛋白质降解中起主要作用的是巯基蛋白酶。 血红蛋白水解酶和羧肽酶的最适pH均为5,最适温度分别为55℃及45℃。硫酸铵分段盐析结果,血红蛋白水解酶和羧肽酶均在30—60%饱和度(0—4℃)沉淀的蛋白质中。
