近年来,鼠伤寒沙门氏菌肠炎在国内外有逐年增多的趋势,并且由于鼠伤寒杆菌耐药性的增加,造成不易治愈,产生带菌状态。现就本病的有关方面作一简要介绍。一、病原学鼠伤寒杆菌属于沙门氏菌 B 组,为革兰氏阴性杆菌,无荚膜,不产生芽胞,具有鞭毛,能运动。该菌在外界环境中的抵抗力较强,在水、牛奶及肉类食品中能生存几个月。在适宜温度下(22~30℃),在食品内能迅速大量繁殖。但加热至60℃时15~30分钟即被杀死。在形态及培养上颇似副伤寒杆菌。
