为了进一步改善烟叶香气品质和优化密集烘烤工艺,在四川省凉山州以云烟85中部叶和上部叶为试验材料,研究了密集烘烤定色后期(47℃~54℃)、干筋前期(54℃~60℃)、干筋后期(60℃~68℃)不同湿度处理对烤后中上部烟叶致香物质和评吸质量的影响.结果表明,密集烘烤后期高湿(T6)能显著提高中部烟叶致香物质总量和新植二烯含量,低湿处理(T1)的大部分致香物质含量较低,但以T3(定色后期低湿度,干筋期高湿度)处理各类致香物质含量最高,且感官评吸质量最佳;在上部叶中,各类致香物质(除新植二烯)和致香物质总量以定色后期和干筋前期低湿,干筋后期高湿(T5)处理最高,评吸质量以T5处理最好,T6处理其次;相关分析表明,大部分评吸指标与各类致香物质之间呈正相关,且不同部位烟叶各指标间的相关性强弱有所不同,中部叶大部分指标间的相关性要好于上部叶.综合考虑,在试验中,中部叶烘烤后期湿球温度以T3(定色后期36℃~37℃,干筋前期39℃~40℃,干筋后期41℃~42℃)、上部叶以T5(定色后期36℃~37℃,干筋前期37℃~38℃,干筋后期41℃~42℃)处理为最佳,能改善烟叶香气品质.
