目的了解光泽县城区餐饮业餐具卫生状况,为餐具卫生监督提供依据。方法于2010—2012年按GB 14934-1994《食(饮)具消毒卫生标准》抽样监测城区不同性质、规模餐饮店中洗净待用的餐具进行检测分析。结果 2010—2012年餐具消毒合格率分别为76.4%、79.3%和80.8%,呈上升趋势;各年均以学校食堂合格率最高,其次为大酒店和酒楼、菜馆和小酒店,小吃和快餐店合格率最低;各年度筷子和汤匙、碗盘和饮具(酒杯、茶杯)合格率差异不大。结论各餐饮业应提高卫生意识,健全消毒保洁柜等设施,加强从业人员卫生知识培训,相关部门应加强卫生监管。
Objective To understand the hygienic condition of tableware in catering industry in Guangze county and to provide basis for hygienic supervision of tableware. Methods From 2010 to 2012, according to GB 14934-1994 Sanitary and hygienic standards for food and drink disinfection, samples from different kinds of restaurants in different scale and scale in the city were sampled for monitoring and analysis. Results The pass rates of tableware disinfection from 2010 to 2012 were 76.4%, 79.3% and 80.8%, respectively, showing an upward trend; the passing rate of school canteens was the highest in every year, followed by hotels and restaurants, restaurants and small hotels, snacks and fast food restaurants The lowest pass rate; chopsticks and tablespoons of each year, dishes and drinks (glass, cup) little difference between the pass rate. Conclusion The catering industry should raise awareness of health, improve the disinfection of cleaning facilities such as cabinets, health professionals to strengthen the training of practitioners, relevant departments should strengthen health supervision.
