在东北我的老家,饮食中有句俚语:“土豆炖茄子,撑死老爷子”。“老爷子”泛指老年人,包括老太太。所谓“撑死”,是夸张的说法,形容老年人特别爱吃这种炖菜。倘若问他们为什么爱吃这“道”菜,恐怕只能说“顺口儿”、“好吃”而已,殊不知这道菜确实是老年人保健养身的佳肴。 “炖”是北方传统的烹饪方法,先将菜在锅中翻炒后多加水,再用慢火长时问烧煮,出锅时汤、菜各半。炖菜比较柔软,再加上土豆和茄子烧煮后更加绵软,所以最适合牙齿不好的老年人食用。此外,这种炖菜易于消化,对肠胃功能减弱的老年人来说,大有益处。
