MAP(自然气调包装)技术适用于各类食品包装。因为可以提高果蔬产品的货架寿命,所以特别适合果蔬保鲜包装,与CAP(控制气调包装)比较,MAP投资较少、操作简便,且成本较低,因而得到愈来愈广泛的应用。本文介绍了MAP的设计程序,指明装有产品的保鲜薄膜经过封严后形成一个“独立”的内部环境,并分析了此内部环境中O2、CO2的组成及其C2H2的作用,温度和湿度的变化等因素对果蔬产品质量及损伤的影响,指出目前要使MAP达到最佳内部包装环境尚存在一定的困难,本文也讨论了要解决这些困难的可能途径。
