什么是羹?(1)《尔雅·释器》“肉谓之羹。”《穆天子传》卷6郭璞注“羹,肉也。”这明白说羹是肉。《广韵》“膳(即羹),熟肉。”《仪礼·乡饮酒礼》,又《乡射礼》,又《公食大夫札》皆有“羹定”之文,郑玄并注:“肉谓之羹,定犹熟也。”《仪礼·特牲馈食礼》有“羹饪”之文,郑注:“肉谓之羹。饪,熟也。”这又明白说羹是熟肉,因此叫羹定,羹饪。(2)《仪礼·士昏礼》释文引晋吕忱《字林》“羹,肉有汁也。《太平御览》卷861引《尔雅》旧注“肉有汁曰羹”。《释名·释饮食》“羹,汪也。汁汪郎也。”王先谦注“羹,多汁者也,故曰汁汪郎。”这又明白说羹不只是肉,并且有汤汁,汤汁还很多。(3)《广雅·释器》“(?),谓之(月立)。”王念孙疏证“(月立)之言汁也。字亦作湆。”《左传·桓公二年》“大羹不致”,杜预注“大羹,肉汁也。”这又明白说羹是肉汁。就古书古注所见对羹的解释有这样三种。它们彼此不同。其实,羹是一个总名。它有各种不同做法,用各种不同材料,因而有各种不同的羹。有的是肉,有的是菜,有的既有肉又有菜,有的是汤,可是肉菜里也都有汤,只是多少不同。
