目的对采买自大型超市、大型酒店中的食品进行检验分析,找出存在的问题,减少食源性疾病的发生。方法对邯郸市大型超市、大型酒店中的食品按类别进行随机采样,对所采样品进行微生物学检测,将结果进行分析。结果所采集的456份食品卫生状况存在安全隐患,6类食品的合格率:熟肉制品为47.54%,非发酵豆制品为68.19%,糕点为83.33%,冷冻饮品饮料为89.17%,瓶装纯净水为94.31%,水产品为95.00%。结论卫生行政部门应提高食品卫生监测和危险性评估能力,加大对食品经营者卫生意识的监管力度,严把卫生许可关,提高从业人员的卫生素质,保证上市食品的安全,从而保证广大消费者的健康。
OBJECTIVE To test and analyze the foodstuffs purchased from large supermarkets and large-scale hotels, find the existing problems and reduce the occurrence of foodborne diseases. Methods Random sampling of food in large-scale supermarkets and large hotels in Handan City was conducted according to categories. Microbiological tests were carried out on the samples taken and the results were analyzed. Results There were potential safety problems in the 456 food hygiene conditions collected. The passing rate of 6 kinds of foodstuffs was 47.54% for cooked meat products, 68.19% for non-fermented soybean products, 83.33% for cakes and 89.17% for frozen drinks and drinks, and bottled purified water 94.31%, aquatic products 95.00%. Conclusion The health administrative department should improve the ability of food hygiene monitoring and risk assessment, increase the supervision of health awareness of food operators, strictly control the hygiene permit, improve the hygiene quality of employees and ensure the safety of listed foods so as to ensure the general consumption The health of the people.
