对外源金属钡离子对大豆脂肪氧合酶的紫外光谱和荧光光谱的影响进行了测定,并考察了钡离子对脂氧酶好氧催化大豆油体系反应产率的影响。结果表明:在Ba2+离子加入量为0.75 mmol·L-1时,脂氧酶特征吸收A360从初始的0.1升高至0.4。但Ba2+离子对脂氧酶发射光谱影响甚微,在360 nmol·L-1峰值处与原始谱图比仅下降了约1.2%。在Ba2+离子加入浓度为4 mmol·L-1时,脂氧酶好氧催化豆油体系的产率从8%提高至18%,影响显著。
The effects of barium ions on ultraviolet and fluorescence spectra of soy lipoxygenase were measured and the effect of barium on the reaction yield of lipoxygenase aerobic catalyzed soybean oil system was investigated. The results showed that when the concentration of Ba2 + was 0.75 mmol·L-1, the characteristic absorption of lipoxygenase A360 increased from 0.4 to 0.4. However, the Ba2 + ion had little effect on the lipopeptide emission spectrum, only a decrease of about 1.2% from the original spectrum at the peak of 360 nmol·L-1. When the concentration of Ba2 + ion was 4 mmol·L-1, the yield of aerobic catalysis soybean oil increased from 8% to 18%, which was significant.
