我国是大豆的故乡,大豆生产及其在食品中的应用都有悠久历史.随着饮食科学的发展,大豆在食品中的地位,越来越引起人们的重视.大豆含蛋白质高达37~40%.蛋白质是构成人体的重要成分,如果除掉人体中的水分,蛋白质要占人体干物质重量的50%以上.每当人们蛋白质摄取量不足,就会使人消瘦,发育不良或引起其他病症.因此,衡量一个国家的营养水平,总是把每人每天平均所食用的蛋白质数量,作为一项重要指标.
