海胆是一种棘皮动物,其种类数以百计。绝大多数海胆都不能食用,只有少数正形海胆可供食用,这少数正形海胆一般都是大型的。日本人最嗜食海胆卵,他们认为海胆卵的营养价值最高,是最佳的海味。日本人最喜欢吃鲜活海胆,因而鲜活海胆的售价也最为昂贵。1987年5月28日大坂市场上北海道产的海胆售价竟达3万日元/千克。按当时汇率计算,每千克海胆的售价在200美元左右,折合人民币750元左右。在北海道壳径5~7厘米的鲜活海胆,每个售价竟达2000日元。合人民币50多元。
