Among the more than 300 species of crabs in the world, there are more than 20 species that have edible value. One of the most famous is the number of “mitten crabs” in China (some call it “the king of crabs”). The most famous Chinese mitten crab is Baiyangdian’s “Sheng Fang Crab”, Yangcheng Lake’s “Clear Water Crab” and Chongming County’s “Old Hair Crab”. The reason why the first two species are famous is that they are big, hard shell, green and tasty in the water environment. The latter is a unique shell convex red block fragrant flavor. Why Chongming old hairy crabs have this special status?
