大豆异黄酮(soybean isoflavone)主要存在于大豆、扁豆、蚕豆等豆类植物中,其成分包括金雀异黄素(genistein)、大豆素(daidzein)、黄豆黄素(glycitein)及其糖苷结合形式、乙酰基结合形式、丙二酰葡萄糖苷结合形式。其化学结构与哺乳动物雌激素17-β雌二醇相似,都有一对羟基且羟基具有相似的距离以及存在一个酚环,这种结构的相似,决定了大豆异黄酮具有一定的雌激素活性,可以和内源性雌激素受体(ER)结合,而表现出类似雌激素样的作用,如:缓解妇女更年期综合征、心血管疾病的防护、抗肿瘤等。
