目的了解泉州市丰泽区饮食业餐具卫生状况,为卫生监管提供依据。方法根据GB 14934-1994《食(饮)具消毒卫生标准》对辖区内不同性质的餐饮业餐具消毒效果进行卫生监测及评价。结果 2010—2012年共检测餐具7 425份,总合格率67.9%,2010年合格率最低62.8%,其次为2012年70.6%,2011年最高72.9%;小吃店合格率最低(62.9%),其次为学校及托幼机构(69.3%)、餐馆(71.5%)和酒店(74.0%),集中式餐具消毒企业合格率最高(82.8%);碟、盆类合格率最低(65.7%),其次为铲、勺类(66.0%)、碗类(68.3%)和筷子(67.9%),杯、桶类合格率最高(76.6%)。结论丰泽区餐饮业餐具合格率处于较低水平,应加强餐饮业的卫生监督及卫生宣传力度,规范餐具消毒管理制度,不断提高餐饮业从业人员的卫生素质,减少公共餐饮不安全隐患。
Objective To understand the sanitary status of tableware in Fengze District of Quanzhou and provide the basis for health supervision. Methods According to GB 14934-1994 “food (drinking) with disinfection health standards” on the different areas of the catering industry tableware disinfection effect of health monitoring and evaluation. Results A total of 7 425 tableware were inspected in 2010-2012, with a total pass rate of 67.9%. The lowest pass rate was 62.8% in 2010, followed by 70.6% in 2012 and the highest of 72.9% in 2011; the lowest passing rate of snack bars was 62.9% For schools and nurseries (69.3%), restaurants (71.5%) and hotels (74.0%), centralized tableware disinfection enterprises had the highest pass rate (82.8%); dishes and pots had the lowest pass rate (65.7%), followed by Shovels, spoons (66.0%), bowls (68.3%) and chopsticks (67.9%), cups, barrels the highest pass rate (76.6%). Conclusion The tableware pass rate of Fortress district is at a low level. Health supervision and public health promotion of catering industry should be strengthened. The system of disinfection and management of tableware should be standardized to continuously improve the hygiene quality of employees in the restaurant industry and reduce the hidden dangers of public catering.
