蕨(Pteridium aquilinum(L)kuhn),风尾蕨科,蕨属。这种山野菜是多年生草本植物,其地上部为叶片和叶柄。幼叶的叶柄未纤维化前可采集食用。鲜嫩的幼叶可炒食或做汤;亦可盐渍或制成干品保藏。食前浸水复原后做菜。这几种吃法都不失其独特的香味。我国从1969年开始每年都向日本出口几万吨优质蕨菜。这种生长在针阔混交林或阔叶林的林间隙地及过伐林中的山野菜还是一种药材,有驱风湿、安神、利尿等功效。
