饮食是人类生存、社稷稳定和发展进步的基础。一个国家、一个社会其饮食如何不仅反映着这个国家与社会的经济状况、政治状况而且直接反映着这个民族的生活方式、风俗习惯及社会风气等。从我国的历史发展过程看,两汉处在一个饮食文化发展和繁荣的关键时期,上承茹毛饮血采拾野果的原始社会和初步形成自主饮食风格的周秦时代,下接饮食文化发展高峰的唐宋和明清时期,两汉的饮食习俗对后世饮食文化的发展繁荣影响深远。两汉时期的饮食文化特点、生活形态与食器的发展,为我们当下挖掘饮食文化的再利用、文创产业甚至文创产品的开发提供了可参照的路径。在当今餐饮产业的变革创新中,文化主体的建构、经营范畴的拓展、器物文脉的保留与传承是其中最主要的价值体现,也是两汉饮食文化在当代发展中最具特征的象征表达。
Diet is the basis of human survival, stability and development and progress. A country, a society how its diet not only reflects the economic conditions of this country and society, the political situation but also directly reflects the nation’s way of life, customs and social ethos. From the perspective of historical development in our country, the two Han dynasties were in a critical period of development and prosperity of food culture. They inherited the primitive society of raw and drinking blood and wild fruits and the Zhou and Qin dynasties that formed their own eating style initially. In the Song, Ming and Qing Dynasties, the eating habits of Han dynasties and far-reaching influence on the development and prosperity of later diets and culture. The characteristics of dietary culture, life forms and the development of food containers during the Han Dynasty provide a reference path for us to tap the re-use of food culture, cultural and creative industries and even the development of cultural and creative products. In the reform and innovation of today’s catering industry, the construction of cultural subject, the expansion of business scope, the retention and inheritance of the veins of artifacts are the most important values embodied therein, and are also the symbolic expression of the most characteristic of the modern Chinese diet culture.
