茭儿菜即野生茭白,属禾本科菰属须根系,多年生宿根性水生草本植物[1],形似茭白,散生于河湖边缘低洼地和沼泽地。茭儿菜生长发育对环境条件的要求:适温范围10~28℃,生长期间不能缺水,需25~50cm深厚土层,以粘壤土或壤土为宜,生长期间需要充足的阳光。茭儿菜清淡甘凉,有机氮以氨基酸状态存在,故鲜美爽脆,利尿解烦热[2]。1田块选择选择地势比较低洼、土层深厚、有水源的保水保肥力强的田块。
