随着二十一世纪的到来,世界旅游业的发展呈现出新的趋势和格局,人们已经不在满足于游山逛水的浅层观光,希望更多的投入到异地之旅的体验之中,到异质文化的深层中寻找乐趣。与其他文化相比,饮食文化更能引起人们的兴趣,更容易被理解与接受,在轻松的氛围中享受美食的同时,游客还可以了解民族文化和风俗人情。不仅是对文化的传承,还能从中品味到精神上的文化内涵,进而提高旅游欣赏水平。对张家界的饮食文化资源进行研究,将饮食文化与旅游活动相结合,使其作为重点融入到旅游过程中,恰好顺应了旅游业发展的趋势。对于提升张家界饮食文化的经济价值,促进张家界旅游业、餐饮业与经济的发展具有极其重要的意义。
