本文报告了十余种采自昆明集市的常见野生食用菌的游离氨基酸、蛋白质水解氨基酸组成的分析结果。表明,各种野生食用菌氨基酸含量丰富、组成全面,且各具特色,有较高的营养价值和开发利用的前景。
This paper reports the analysis results of the free amino acid and proteolytic amino acid composition of more than ten species of wild edible fungi collected from the Kunming market. Show that all kinds of wild edible mushrooms rich in amino acids, a comprehensive composition, and have their own characteristics, have a higher nutritional value and prospect of development and utilization.
