北京烤鸭是以北京填鸭为原料、用传统的独特方法烤制而成.北京烤鸭是否含有致癌性的3—4苯并芘(Bdp),苯并芘的含量有多少,对人体健康是否有不良影响,这一系列问题,颇为人们所关注.为了给以科学的解答,我们与北京公用局有关单位协同作了一些试验与测定.测试所采用的烤鸭,为北京市同一产地的一级北京填鸭.将25只填鸭随机平均分成五组,其中(1)组以果木(桃、枣木)为燃烧烘烤;(2)组以电炉
