本文基于采用3d—24h膳食回顾法对贵州省普定县8个自然村的全户调查数据,运用联立方程组,分析了贫困山区道路、季节性饮用水缺乏对农户营养、健康的影响,以便为解决住户层次的食物安全问题提供新的实证依据。本文主要发现有三点:第一,在调查地区,尽管农民的基本温饱已经能够得到基本保障,但是,其营养结构还是不太合理,蛋白质摄入量普遍不足,膳食质量有待进一步提高;第二,尽管道路和饮用水条件的改善对农户人均收入提高有显著影响,但是,收入对蛋白质摄入量影响不显著;第三,居住地到县城的距离以及农户的收入水平对其膳食多样性有显著影响。
Based on the household survey data of 8 villages in Puding County, Guizhou Province, using the 3D-24h dietary review method, this paper uses simultaneous equations to analyze the impact of poor mountainous roads and seasonal drinking water on the nutrition and health of farmers in order to Provide new evidence base for solving the problem of food safety at household level. The main findings of the paper are as follows: First, although the basic subsistence allowances for peasants have been basically guaranteed in the surveyed areas, their nutrition structure is still not very reasonable, their protein intake is generally inadequate and the quality of their meals needs to be further improved. Second, Although the improvement of roads and drinking water conditions have a significant impact on the increase of per capita income of farmers, the income has no significant effect on the protein intake. Thirdly, the distance from the place of residence to the county seat and the income level of farmers have significant effects on their dietary diversity influences.
