作者在对醋糟培养料和棉子壳培养料栽培的平菇类蛋白质及氮基酸含量测定的基础上,按照蛋白质的质量评价标准,比较了不同培养料栽培的四个样品中必需氨基酸的化学评分。由营养成分测定和计算比较结果表明,醋槽料蛋白质质量较佳。就四个供试样品而言,平菇类不失为一种人类较好的素食蛋白源。
