一、前言枣是我国的特产果树,易于栽培,分布辽阔,营养价值高,用途广,实为大众化的果品,深受劳动人民的欢迎;枣的果实可以加工,制成干枣、熏枣、蜜枣以及枣酒、枣醋等,能长期贮藏,且耐运输,也是我国出口土特产之一种,能换取外汇,支援国家建设;枣的果实含有较高的糖分,可以混入米面制成食品以供食用,故又有“木本粮食”之称。因此,枣是值得我们重视的一种果树。我国古代文献中有关枣树栽培的记载较多,为了研究和学习古代人民对枣的栽培和利用等经验,特将它作些总结性的介绍,以供参考。
