本实验给雌性断乳大鼠分别喂以含和不含1%胆固醇的饲料,并比较了大豆蛋白和酪蛋白对大鼠血浆和肝脏胆固醇含量的影响。结果表明,当饲料中无胆固醇时,酪蛋白可增加大鼠肝脏胆固醇含量。含1%胆固醇的饲料也可明显升高酪蛋白组大鼠肝胆固醇含量。而大鼠血浆胆固醇含量不受食物蛋白质来源的影响。胆汁中胆固醇含量与饲料中胆固醇水平高低有关,而与蛋白质来源无关。结果提示:大豆蛋白质能够降低动物肝胆固醇含量。
In this study, female weanling rats were fed diets containing 1% cholesterol and no cholesterol, and the effects of soy protein and casein on the plasma and hepatic cholesterol contents in rats were compared. The results showed that casein increased the hepatic cholesterol content in the diet when there was no cholesterol in the diet. The diet containing 1% cholesterol also significantly increased the hepatic cholesterol in casein group. The plasma cholesterol level in rats was not affected by the protein source. Cholesterol cholesterol content and feed cholesterol levels, but has nothing to do with the protein source. The results suggest that: soy protein can reduce the animal liver cholesterol content.
