聚焦于单一品类,使之成为该品类中餐的代名词,愈来愈受到资本的青睐,除了西少爷,小恒水饺、遇见小面等单品类餐饮,也陆续拿到了融资。说起洋快餐,很多中国消费者固化地认为,必胜客就是比萨的代名词,肯德基善于做炸鸡,麦当劳长于做汉堡。但丰富多彩的中餐,提起某个品类,消费者很难想到有一个品牌。消费升级,带来了新机会,也让资本热衷于投资这类聚焦于某一品类的餐饮创业者。在投资者看来,创始人有能力把产品、品类进行改造,实现品牌化,然后借助资本运作变成未来连锁企业。
