用高压液相色谱法对胃癌高发区小咸鱼干中的酪胺进行了测定及其亚硝化以后的致突变性检测。结果发现其酪胺含量与致突变性之间有明显的相关性(r=0,993,P<0.01);并进一步用薄层色谱法对咸鱼干中的酪胺进行了确证。
High-pressure liquid chromatography was used to determine tyramine in small salted fish and its mutagenicity after nitrosation. The results showed that there was a significant correlation between tyramine content and mutagenicity (r = 0,993, P <0.01). The tyramine in salted dried fish was further confirmed by TLC.
