魔芋为天南星科、魔芋属植物的块根.我国主要分布在南方各省山地高原区,资源十分丰富.魔芋经加工后制成的精粉,主要含葡甘聚糖,其特点是具有很强的吸水性,吸水膨胀80~100倍.膨胀后的葡甘聚糖,在加热的碱液中则转化为不可逆的凝胶.利用这一特性,代替琼脂制备食用菌斜面培养基,可降低生产成本.
