以2016年10月上旬在新疆精河县艾比湖周边采集的西伯利亚白刺新鲜果实为试材,采用浸提萃取法提取西伯利亚白刺果实天然红色素,研究了不同因素对西伯利亚白刺新鲜果实红色素稳定性的影响。结果表明:西伯利亚白刺果实红色素的最佳提取溶剂为0.37%的盐酸水溶液;新疆西伯利亚白刺果实红色素的抗还原性、耐日光、耐热性较强,水溶性很强,红色素的颜色鲜艳,但是抗氧化性质较差;酸碱度对西伯利亚白刺红色素的影响较大,在较强的酸性条件下稳定性较好,在碱性条件下不稳定;食品添加剂对西伯利亚白刺红色素稳定性的影响不大;但是金属离子Fe~(3+)对红色素稳定性影响很大,其它金属离子对西伯利白刺果实红色素的稳定性影响不大。

Other metal ions have little effect on the stability of red pigment of siberian white.
