通过对山葡萄果实不同采收期的浆果百粒重、品质及酿造后酒质的分析 ,结果表明 ,山葡萄进入 9月份成熟度提高速度加快 ,果实的总糖、色素、游离氨基酸、维生素C含量均呈上升趋势 ;滴定酸、单宁含量均呈下降趋势。酿酒试验结果也证实 ,越到后期采收 ,成熟度越高 ,酒质越好。但是 ,“双优”和“左山一”晚采百粒重下降。因此 ,为了达到质与量的统一 ,获得更高经济效益 ,“双优”的适宜采收期为 9月 16日~ 9月 2 1日 (盛花后 10 0~ 15 0d) ,“左山一”的适宜采收期为 9月 11日~ 9月 16日 (盛花后 95~ 10 0d)。
