叶菾菜又称莙荙菜,它是藜科、甜菜属的一二年生草本,绿叶类蔬菜,以嫩叶供食用。叶菾菜原产于欧洲南部以及地中海沿岸地区,经波斯等地传入我国。由于驯化历史久远,栽培地域广阔,人们根据食用器官及其形态、品质、功能等特征,并参照域外名称翻译,先后赋予它五花八门的名称。 在我国古籍中,莙和荙原来分别指某种藻类和野草。用莙荙联合命名始见于北宋时期的《嘉祐补注神农本草》。它又可写作君达、莙达、军达、军荙,都是源于波斯语-gundar——的汉字音译。由于各地方言的差异,还派生出诸如根达、根大、根答、根斗、根刀和根头等为数众多的俗称。过去有人不了解其名称的来源,竟把它写成“善逵菜”,闹出过鲁鱼亥豕的笑话。
