一、关于自由水和结合水自由水是指细胞中以游离的形式存在并可以流动的水,它是细胞内的良好溶剂,有助于物质的运输和代谢的正常进行,因此,其含量的多少决定着细胞的代谢强度;结合水是指细胞内与其他物质相结合的水,吸附和结合在有机固体物质上,它主要参与细胞的构成。在心肌和血液中,自由水的含量都比结合水多,但心肌中结合水占的比例大于血液,这决定了两者具有不同的组织结构和功能。不同的细胞以及生长发育的不同时期,自由水的含量变化很大,如种子在萌发时,先要吸取大量的水分,以增加自由水的含量,加快代谢速率。
