番木瓜蛋白酶是木瓜凝乳蛋白酶和木瓜蛋白酶Ⅲ(肽酶)等多种酶的混合物,具有水解肽类、酰胺类和酯类化合物的功能。全世界每年消耗木瓜蛋白酶约600吨,其中50%用作肉类嫩化剂,20%用作啤酒澄清剂,30%用于医药、纺织、皮革及日用化工等行业。国内投放市场的木瓜蛋白酶制品有广西热作所的“嫩肉酥”及广东江门产的用于啤酒工业的“酶清”等。1987年8—12月,我们对西双版纳不同地区的木瓜果实进行了8次木瓜蛋白酶的研制试验。初步结果报告如下。
Papain is a mixture of enzymes such as papain and papain (peptidase) and has the function of hydrolyzing peptides, amides and esters. Approximately 600 tons of papain are consumed worldwide each year, 50% of which are used as meat tenderizer, 20% as beer clarifier and 30% for pharmaceutical, textile, leather and household chemical industries. Papain products marketed in the market include “Tender Roulai” produced by Guangxi Institute of Hot Work and “Qingzhai” produced by Jiangmen City of Guangdong Province for the beer industry. From August to December 1987, we conducted eight papain tests on papaya fruits in different regions of Xishuangbanna. The preliminary results are reported below.
