真实蜂蜜与掺假蜂蜜是蜂蜜行业的一个重要问题。用于蜂蜜掺假的糖浆生产配方已经改变，使得这类糖浆不再含有具体的标志物复合物。为此，收集了一系列的糖浆样品并进行了掺假试验。与真实蜂蜜参考数据库同时使用，核磁共振分析可以检测不同类型的蜂蜜掺假，比如蜜蜂喂食或者添加糖，并可同时提供其他有关地理和植物原产地等信息。

江苏出入境检验检疫局自从2014 年推出SM-X 方法以来，一直针对新的糖浆进行跟踪研发，在过去工作的基础上，建立了指纹图谱和特征标志物相结合的蜂蜜中混合糖浆检定方法。该方法结合了特征标志物方法的灵敏度和准确性高的优点，又综合了蜂蜜本身的性质特点，能有效地解决蜂蜜中各种糖浆和混合糖浆的检测问题，目前已经作为食品安全国家标准立项。
