Banana fruit stored below 12℃ are developing chilling injury(CI)symptoms, evident as peel blackening and abnormal ripening. This research aimed to study the effect of 1-MCP and ethylene on CI,especially abnormal ripening symptoms,of banana fruit.Eighty percentage maturity ofHom Thongand Namwa banana fruit were treated or not treated with 500 mg/L of ethephon or fumigated with 500 nl/L 1-methylcyclopropene(1-MCP)before storage at 4℃ for 8 to 12 days respectively.Every 4 days during storage, the fruit were transferred to 25℃ and evaluated for quality attributes every 2 days. The results showed that banana treated with ethephon showed less CI symptoms than the control and 1-MCP fumigated fruit after transfer to 25℃,respectively.Fruit qualities of all treatments did not change during storage. After transferred to 25℃,it was found that fruit treated with ethephon showed increased TSS,TA and TS contents, ethylene production and respiration rate.In contrast, peel and pulp firmness decreased and was lower than the control and 1-MCP fumigated fruit.BothHom ThongandNamwabananas treated with ethephon normally ripened after transfer to 25℃.Banana treated with ethephon had more mRNA abundance of MA-ACS,MA-ACO and MA-beta amylase than that fruit treated with 1-MCP or the control. In conclusion, both banana fruits pre-treated with ethephon(ethylene)before storage at low temperature normally ripened after transfer to room temperature and had reduced CI symptoms.
