亚硝酸盐是作为一种允许使用的食品添加剂,在控制的安全范围内使用不会对人体造成危害.但摄入过量的亚硝酸盐,血红蛋白的亚铁将氧化为高铁状态,从而形成不能送氧的高铁血红蛋白;高铁血红蛋白达到30%~50%时,可导致贫血性缺血,造成全身各组织特别是脑组织的急性损害,出现呼吸困难,神经机能紊乱,甚至死亡[1].
