目的通过对2015年桐乡市食品中污染物及有害因素的分析,掌握食品中的污染物情况,为有关部门提供科学依据。方法按照《嘉兴市食品安全风险监测方案》的要求,开展化学污染物及有害因素监测结果分析。结果 2015年按照国家和省市方案要求,共对166份食品开展化学污染物和有害因素监测,超标率为7.23%;7类食品中,主要是藻类及其制品与油炸面制品中的铝含量超标,平均值分别为276.97 mg/kg、120.38 mg/kg,其他食品中铝含量均未超标。藻类及其制品的超标率(66.67%)与油炸面制品(13.33%)差异有统计学意义(χ2=4.11,P<0.05)。水产动物与谷物中的镉超标率差异有统计学意义(χ2=3.94,P<0.05)。2份梭子蟹中检出总砷含量最高。自主监测样品超标率为1%。结论桐乡市食品中化学污染物的总体情况尚可,仍有一些污染物指标超标现象。建议加强对高危食品的污染监测,从源头上保障市民饮食安全。
Objective To analyze the contaminants in food and the harmful factors in Tongxiang City in 2015 and grasp the situation of contaminants in food so as to provide scientific basis for relevant departments. Methods According to the requirements of Jiaxing Food Safety Risk Monitoring Plan, the monitoring results of chemical pollutants and harmful factors were analyzed. Results In 2015, according to the requirements of the national and provincial programs, a total of 166 foodstuffs were monitored for chemical pollutants and harmful factors, with an exceeding standard rate of 7.23%. Of the seven types of foodstuffs, mainly algae and their products and aluminum in fried noodles The contents were beyond the standard, with the average values of 276.97 mg / kg and 120.38 mg / kg, respectively. The contents of aluminum in other food products were not exceeded. Algae and their products exceeded the standard (66.67%) and fried noodles (13.33%) difference was statistically significant (χ2 = 4.11, P <0.05). There was a significant difference in the excess of cadmium in aquatic animals and grains (χ2 = 3.94, P <0.05). The total content of arsenic in the two crabs was the highest. The rate of self-monitoring samples exceeded 1%. Conclusion The overall situation of chemical pollutants in food in Tongxiang is acceptable. There are still some indicators of excessive pollutants. It is proposed to strengthen the monitoring of the pollution of high-risk foods and ensure the safety of citizens’ diet from the very beginning.
