优选人参皂苷Re转化为人参皂苷Rg_2最佳发酵工艺条件,计算人参皂苷Rg_2转化产率。采用HPLC法,从发酵时间、发酵温度、复合菌添加量3方面,以人参皂苷Rg_2转化产率为评价指标,优选人参发酵条件,并进行相关性分析。人参发酵工艺为酶解温度60℃、加酶量10%、发酵时间10d。采用正交实验优选人参发酵工艺条件,该实验可以为人参皂苷Rg_2的工业化生产提供新的途径。
