蘑菇食蜡,是营养丰富、味道鲜美、香甜俱全的酸味调味品。我国传统的酿醋原料主要是粮食和油料作物,其不仅耗粮量大,而且工艺繁杂,成本较高。生产蘑菇食醋的主要原料是利用商品菇分级时剩下的菇脚、碎菇和盐渍商品蘑菇时的杀青水添加部分辅料酿制而成,因此成本低廉,工艺简单,设备投资600余元便可投产。一吨杀青水或者菇脚可生产食醋1.7吨,价值约850元,原料成本约40元。现将其生产技术介绍如下:
