研究优化甜菜树多糖的提取工艺,并测定其多糖的抗氧化性。采用苯酚-浓硫酸法测定甜菜树多糖的含量,通过正交试验优化了多糖的提取工艺,以羟基自由基(·OH)、1,1-苯基-2-苦基肼自由基(DPPH·)和超氧阴离子自由基(O2-·)清除能力为指标,探究了甜菜树多糖的体外抗氧化活性。结果表明:多糖的最佳提取工艺参数为料液比1:50 g/m L、超声时间30 min、超声温度40℃,在此条件下多糖的平均提取率为2.70%。体外抗氧化活性结果表明,多糖对羟基自由基、DPPH自由基和超氧阴离子自由基的清除率可分别达到78.99%、75.65%和87.40%,说明多糖对·OH、DPPH·和O_2~-·有较强的清除能力。
