1.冬笋选择新鲜未破损的冬笋放置于2~3米深的窖内,窖底部先铺上一层10厘米厚的黄沙土,沙土以手握成团、松手即散为宜。再将冬笋一根根地摆好(尖朝上),一层沙土一层冬笋,以不露笋尖和笋壳为佳。全部摆完后,再盖一层黄沙土。然后用木板或石块密封窖口,再加封一层塑料薄膜,可防止雨水滴入。密封后,每隔30天检查一次,看是否有变质腐烂的竹笋,如有则将其清理干净。此法可储藏保鲜冬笋60~90天,保鲜效果好。
