蔬菜种类繁多,栽培方式多样,对种子的处理也不同,有的播干种子,有的播浸泡的种子,还有的播出芽的种子。经催芽的种子播种后出苗快、苗齐而壮,因此催芽是蔬菜栽培的一个重要环节,瓜类及茄果类蔬菜一般种子均需浸种催芽。催芽一般要求三个条件,一是水分,这在浸种过程中已满足了;二是氧气;三是温度。三者缺一不可。由于各地条件差异很大,催芽的方法也多种多样,主要包括以下几种:
