目的了解金阊区食品行业餐饮具卫生状况,为加强卫生监督监测和指导提供依据。方法随机抽检餐饮行业已消毒的餐饮具,根据饮食具消毒卫生标准采用纸片法,检测大肠菌群指标是否合格,评价其消毒质量。结果共抽取餐饮具样品5 472件,总合格率为64.9%。不同规模、不同类别单位,其检测结果存在差异,合格率最高的是大型餐馆,为97.7%,最低的是工地食堂,合格率为42.3%,差异有统计学意义(χ2=5.496,P<0.05)。结论金阊区餐饮业卫生状况参差不齐,卫生监督部门需根据监测情况采取不同的对策进行宣传、监督和指导,同时根据季节不同增加检测频次,以提高餐饮业卫生质量。
Objective To understand the hygienic status of tableware in food industry in Jinli District and provide basis for strengthening supervision and guidance of hygienic supervision. Methods Random sampling food and beverage industry has been disinfected tableware, according to the disinfection of food hygiene standards using paper method to detect coliform indicators are eligible to evaluate the quality of disinfection. Results A total of 5 472 tableware samples were taken, with a total pass rate of 64.9%. Different scale and different types of units, the test results are different, the highest passing rate is large restaurants, 97.7%, the lowest is the canteen, the pass rate was 42.3%, the difference was statistically significant (χ2 = 5.496, P <0.05 ). Conclusions The health status of catering industry in Jinli District is uneven. Health supervision departments need to adopt different measures to promote, supervise and guide according to the monitoring situation. At the same time, the frequency of testing should be increased according to different seasons so as to improve the hygiene quality in the catering industry.
