目的了解温州市鹿城区油炸面制早餐食品中铝含量现状。方法按照国家标准《面制食品中铝的检测》(GB/T 5009.182—2003)中的铬天青S-分光光度法检测铝含量,卫生评价按照《食品安全国家标准食品添加剂使用标准》(GB 2760—2011)铝≤100 mg/kg判为合格。结果 170份抽检样品的合格率为32.94%;铝含量中位数为258.0 mg/kg,最高达1 293.4 mg/kg。其中油条合格率最低为13.00%;流动摊贩油炸面制食品超标率最高为100.00%。结论温州市鹿城区早餐食品铝含量超标现状严峻,消费者及有关部门应提高重视。
Objective To understand the status of aluminum content in fried noodle breakfast foods in Lucheng District, Wenzhou City. Methods The aluminum content was determined by chromazurol S-spectrophotometry in accordance with the national standard “Detection of aluminum in noodle food” (GB / T 5009.182-2003). The health evaluation was carried out in accordance with the standards of “Food Safety Standard for Food Additives” (GB 2760-2011) Aluminum ≤100 mg / kg Conformity. Results The qualified rate of 170 sampling samples was 32.94%; the median of aluminum content was 258.0 mg / kg and the highest was 1 293.4 mg / kg. Including the minimum pass rate of 13.00%; mobile vendors fried noodles up to 100.00% excess rate. Conclusion Lucheng District, Wenzhou City, excessive levels of aluminum content of breakfast food is grim, consumers and relevant departments should pay more attention.
