初识紫苏,是在品尝西餐时。当下也有一些新派中式餐厅,将紫苏作为调味的香草使用。在西方人眼中,紫苏、迷迭香就是类似中餐里葱、姜、蒜一样的角色,种上一两盆在厨房的窗台上,烹饪时,随手摘下几片叶子,既可为菜品增香去腥,又有点缀之功。在我国,紫苏则是历史悠久的中药材,药用远多于食用,位列我国卫生部首批颁布的既是食品又是药品的中药材名单之中。
