生姜为姜科姜属的多年生宿根蔬菜植物,生产上仅作一年栽培,它原产于热带多雨森林区,性喜于阴湿而温暖之环境中生长,但不耐寒热,高温或强光直射均能产生生理障碍,故其对一境之要求甚严。我国生姜之栽培始于周代,因其根茎中富含挥发性的姜油酮和姜油酚,使其颇具辣味而欲食者甚众。食用少量的生姜,可刺激肠胃之消化腺分泌消化液,助食物之消化;生姜 Ginger is a perennial root vegetable belonging to the genus Zingiber officinale.
