目的 了解某高校大学生的膳食结构与铁营养状况。方法 采用 2 4h膳食记录法及称重法进行膳食调查 ,并进行常规营养缺乏病的实验室检查。结果 蛋白质摄入量男、女生分别占供给量标准 (RDA)的 85 3%和 72 9% ,优质蛋白质不足 ;抗坏血酸摄入量男、女生分别占RDA的 5 9 3%和 6 5 3% ;铁摄入量男、女生分别占RDA的 133%和 10 2 %。缺铁性贫血 (IDA )的患病率男、女生分别为 15 6 1%和2 9 5 4%。 4h负荷尿试验 ,维生素C不足率男、女生分别为30 %和 15 %。结论 该校大学生膳食中动物性食品及蔬菜、水果类食品摄入量偏低。尽管膳食中铁摄入量超过RDA ,但由于铁利用率低 ,同时优质蛋白质及维生素C摄入量低 ,造成机体铁营养状况较差。应努力改善膳食结构 ,达到合理膳食的要求
Objective To understand the dietary structure and iron nutrition of college students in a university. Methods 24 h dietary record method and weighing method were used for dietary surveys and routine laboratory tests of nutritional deficiencies were performed. Results The protein intakes of male and female students accounted for 85.3% and 72.9% of the supply standard (RDA) respectively, and the high-quality protein was deficient. Ascorbic acid intake accounted for 59.3% and 65.3% of the RDA respectively. Iron intake Male and female students account for 133% and 102% of RDA, respectively. The prevalence of iron deficiency anemia (IDA) was 15 6 1% and 29 4% respectively. 4h load urine test, vitamin C deficiency rate of men and girls were 30% and 15%. Conclusions The intake of animal foods, vegetables and fruits in the university students’ diet is low. Although dietary iron intake exceeds RDA, iron supplementation in the body is poor due to low iron use rates and low intake of good protein and vitamin C supplements. Efforts should be made to improve the diet and to meet the requirements of a reasonable diet
