甘蓝是结球甘蓝的简称,俗称洋白菜、卷心菜。它是十字花科芸苔属,二年生草本,甘蓝类蔬菜,以叶球供食用。以地域色彩及食用器官形态两大命名因素为主要依据,甘蓝累计得到过二三十种不同的称谓。 甘蓝原产于欧洲,它先后经由西北、西南、东北和东南等地区,多次传入中国。甘蓝最初是以散叶形态引入的。 甘蓝的名称始见于唐代的《本草拾遗》,从其关于“此是西土蓝”的记述可以说明:散叶类型的甘蓝沿着丝绸之路传入我国的时间,应不迟于唐代。因为它有淡淡的甜味,那蓝绿色的叶片又与我国原有的染料作物“蓝”很相似,所以定名为“甘蓝”。由于它来自西域(今中亚地区),故以引入地的代称命名为西土蓝。 另从李时珍《本草纲目》转引的“河东、陇西、羌、胡多种食之”推知,甘蓝引入后,在相当长的时间里只是在信奉伊斯兰教的少数民族聚居区驯化、栽培的。因此甘蓝又得到
